I'm on a mixed MAC and PC network, and I need a fast and STABLE palm. I've heard that the 700 is more stable, but the 755 has better mac software.

Hi whichpalmforme,

It's somewhat of a personal choice, but here is a nice review from PalmInfoCenter explaining the changes the 755 offers over the 700.

Not sure what to tell you about the Mac vs. Windoze differences (couldn't find a review on that subject).

Hope this helps a little with your choice! (let us know your thoughts after you make your choice and get to play for a bit).
